Perhaps you have not noticed, but it is Blueberry Season!! This means that every week under the guise of having my own market stall, I scurry over to my friend's stall (Scott Howard Farms) and buy cartons and cartons of blueberries!
This week's masterpiece: Blueberry Cobbler
In a stroke of fortune, two cartons of blueberries provides enough for the cobbler, plus a breakfast of blueberries and cream.
I am sure this cobbler should be served with a scoop of vanilla ice cream or some whipped topping, but it is so good we are just eating it as. Just as fast as we can....
Blueberry Cobbler Recipe
INGREDIENTS:
1-1/2 sticks butter
1-1/2 cup sugar
1-1/2 cup milk
2 teaspoon vanilla extract
1 cup self-rising flour
1 cup self-rising cornmeal (if you don't have the self-rising kind, add 1 tsp baking powder)
3 cups fresh blueberries
PREPARATION:
Melt butter in a shallow 4-quart baking dish. Mix together flour, sugar, and milk to make a batter;
Pour batter over the hot melted butter. Do not stir. Arrange fruit evenly over the top. Bake at 375 for about 40 to 50 minutes, or until top is nicely browned.
