I am a decent cook - I make (mostly) tasty food and can follow a recipe. But I have never been much of an innovator. This morning, I had a recipe I really wanted to make for Spicy Green Chili Chicken Lasagna. So I got my recipe out, and realized that I had almost none of the required ingredients, other than chicken. So - made some alterations. I mean, I am sure the original recipe is delicious too, but I am inordinately proud of myself for this!!!
2 c salsa verde - nope, chopped up some tomatillos and onions as a sub
2 c Mexican cheese blend - nope, subbed in some provolone
10 oz. no-boil lasagna noodles - nope, subbed in ziti, cooked al dente
1 container crema - nope, subbed in some ricotta
1 can roasted green chiles - nope, chopped up some of my pickled jalapenos
4 c cooked chicken - had this one
2 c mozzarella cheese, grated - had this one
3/4 c sour cream - had this one
1 teaspoon cumin
1 teaspoon chili powder
