Many years ago, when I first started gardening, I planted lots and lots of vegetables. My harvests were amazing. And then I remembered that Mr. Double Up does not actually eat veggies. I still have frozen green beans and canned pickles from 2015....
These days, my gardening excess is directed at herbs and elderberries - and my vegetable gardening is only to provide enough for me!! This is the time of year when I look like a Vegan, because I eat like this for every meal, for weeks. A day's harvest provides enough for me each day - it is fabulous! Today's batch is going to be curried zucchini and beans with a side of chilled cucumber salad.
